Lemon Drizzle Traybake

Yesterday afternoon it was raining outside, but we had sunshine right here in the form of Mary's simple and delicious Lemon Drizzle Traybake. I made this off the cuff and didn't have fresh lemons, so I used 2tbsp of bottled lemon juice in the sponge and 1tbsp lemon juice and the juice of 1 lime for the drizzle. The result was a tangy, crunchy topping on a light and fluffy sponge. Lemony loveliness perfect for delivering a much needed summertime citrus hit on a grey day.
